A couple years ago, somebody on here had a light layup Riot with a ventilated bottom and a 2.5 with about 340 hp. I am pretty sure that setup could beat any jet ski zero to 60

I wonder how a 21 skater with twin 280/260s would fair in all this.

Just for a quick reference my old factory racing ski which I still have went from 0-30 in 2.1 seconds stock and 61mph. Now its 1.6 seconds 0-30 but still only goes 64mph. This is a 2003 SeaDoo XPDI front engine 951 DI Engine with only 130 hp factory. Its under 9' long and only 562 lbs. Now 172hp. It might have great holeshot but a fast boat will be across the lake 5 minutes faster.
I think comparing a jetski to a fast boat isn't fair. It's like watching the 68 Camaro 472 with 14" slicks take on a factory 2015 Lamborghini on a drag track. Lambo will never win but yet you can barely drive that camaro across country or above 70mph and 70 mph for the lambo is just above idling.If I don't ask any questions, I'll never learn anything.

A 21 Skater with a built set of twins and a low pitch props is going to put a hurt on most any recreational boat out there.

I had a turbo-converted seadoo rxp running mid 80's. Acceleration was brutal.
When I got into boats I wanted the same thing since I accelerate out of idle zones way more often than I run 70+ anyway. I had a checkmate pulsare 2100br with a hydrotec stage 2+ Yamaha 300. I had props that would do 90 but the one I always ran was a short high 5. It only did 75 on the limiter but data logs showed 0-60 in about 6.5 seconds. It was ok but would still get smoked by a modern ski. On my current 23' eliminator with twin stage 2 Yamaha 300's. With 24" bravo1's it topped out hard on the limiters in the low 70's but would launch like a rocket. People look at you funny though, when you tell them your twin-300 cat only does 73 mph.

I thought i had a pic of it with the engines in but cant find.
It is the biggest ski i have ever seen dont know the model.
He took the stock engine out and installed the prop shafts.
Then he installed a 260 merc in the rear to the pump.
Then he made a drive system that hooks an other 260 to both props as the front engine.
Made entire water cooled exhaust for both engines.
The engine mounts alone was a work of art.
Every part hand made.
He ran it and it worked but had problems with getting props and keeping the rpm matched on the engines.
He finally pulled the front engine and props and just ran the one 260 on the pump.
I got to ride it that way and it was cool to hear the merc exhaust while riding a ski.

For those that live on or visit lakes that have posted speed limits, a boat or pwc that can blast 0 to 60 mph the fastest is the one to beat. Under propping with a smaller pitch prop I assume is the surest way to have faster acceleration with the loss of top end speed and cruise economy. Am I correct in this assumption? I have a preference for light weight for any performance goals, being on the water or land. I have a 1923 Track-T roadster that weighs 1790 lbs and has 525 hp and a light weight manual transmission. I want the water equivalent, so I'm leaning towards a light lay up STV with a 375 lb Mercury 280. Now my question to you knowledgeable good folks, what are your opinions to this combination using a prop pitch that tops out at around 75 mph? I already know the beauty of the STV is it's stability at speed and under pitching defeats that, but if the lake you use has speed limits, running triple digits will get your boat banned from the lake. Will this combo have a hole shot that will make up for not getting to go 110 mph?

You could put a 1.87 gear and a 20 pitch Yamaha drag on it. It would still go faster than 75 unless it still has the limiter in place
