If built by todays standards using Vacuum infusing with Kevlar and composites I would love to see the Laser 380 make a comeback. Don`t change a thing either.

A Vector was built with a 300 lb motor in mind, the old 2 stroke V6's are already 100 lbs heavier. Add another 100 lbs for a 250/300R and you're going down by the transom...
A Vulture is another matter completely, it will hold a big motor but the deck was updated to the Vegas for a reason (weight distribution). The XT bottom is also a big improvement over the V bottom IMO.Josh Peterson

Any of the old outboard checkmates. 16, 18, 20 ft. made with new techniques, no wood. Maybe a bit more freeboard to handle the new heavier motors. I bought one in the 80's, i would love to have one now.
