Rhapsody, Fratello, Smoked Gouda, Smoked Mozzarella.
I had this shipped from Wisconsin. I have several flavors I haven't tried yet. The Fratello is my favorite so far, but all of it is SO good. The smoked cheese is great also... Hard to choose!

With my simple taste, I will make a meal out of just cheese and bread.
So my simple tastes were enlightened in France. When still a teenager, I was with my dad in Europe. We stopped at a roadside French restaurant in France. Then our friend Renato, from Italy, ordered some cheese.
The waiter brings out a platter of cheese which many were aged. There was mold over half of the 8 or 10 varieties of cheeses on the platter. Renato selects about 3 varieties, and at least two have mold on the outside surfaces.
So my greenhorn eyes are looking at Renato’s plate, and I’m thinking is he going to eat that. Renato in style, like a chef schooling a newbie cook (me) in his kitchen, take’s his knife and cuts off the outer molds with precision. And with a Cheshire cat smile, Renato proceeds to eat the non-molded cheese sections. I grew up eating Wisconsin cheddar, and now culture broadens my palate.

This gives Cheeses a bad name. Cheeses made with using human bacteria.
~~~~~
"It turns out that many of the bacteria used to make cheese are similar to bacteria encountered on human skin. That’s why sometimes the scent of stinky feet and stinky cheese overlap. Some of the bacteria on the human body also has the power to turn fresh milk into cheese, and that was used to make the "cheese selfies."
The blue cheese dressing took a bit of getting used to, but I like it.
Went to eat dinner with Howard Arenson and crew in a high-end restaurant in San Rafael.
Luckily Rik was there to show us Louisiana rednecks the ropes. Sourdough bread, you poured olive oil on the plate, then sprinkled it with Parmesan cheese, then "sopped" it up with the bread you tore apart.
Talk about GOOD... The only thing better was the super thick pork chop that came next!
Holy f**king hot cheese BATMAN!!! DAMN!!! EL DIABLO - SCORPION PEPPER GOUDA... I am on FIRE!!!!
We added flecks of Trinidad scorpion pepper to our gouda cheese for an irresistible blend of spicy, creamy, and sweet flavors. This one is only for those who can take the heat.
