    I need to make another bottom pan for my smoker/grill.... It has a spit long enough to put a big poke loin on!!!!

    Fixing to be cool enough to eat chili though... I cook two big dutch ovens at a time, eat some, freeze the rest.

    Being lazy as a trait, I've been using ass gas mostly... for steaks and even babybacks.

    Crazy as it sounds, I had the pan for this thing out of the grill... And the damn wind blew it away.... I guess I'll have one built out of SS instead of steel. Circa early 80s? Needs new wood and paint but is still solid.

    Oh me too. I had one of of those Mr Smokers... one of tall round ones with the water pan in the center. Somewhere I have or had a "rib rack" where you could stand several racks of ribs on end. I used mesquite wood and charcoal. Apple cider vinegar, water and Boone's Farm Wild Island "wine".... Also cut up onions and mashed up garlic in the water pan... I would soak the mesquite in the water until it needed wood in the fire pan.

    And I was just playing around and it turned out better than anything I have eaten at a BBQ!!!

    Oh, when I cook a poke loin like that, I cut off a 2" thick slug off the end, then stuff a few garlic cloves in it, and slow cook it in the oven until if falls apart.... And THAT goes in with the baked BEANS!!!

    I was thinking of buying a pellet smoker/grill, but they are so expensive, it needs its own building to keep it in!

    While you are smoking, try smoking some almonds. My first attempt failed... too soft... and then I got to drinking one night and forgot to take them off the smoker (electric) and ran them twice as long... 48 hrs...And they turned out perfect!!! I have a spice/coffee grinder I grind garlic salt to a fine powder, then add that to the almonds in a ziplock bag where you can shake it around. Better than any store bought, I promise. Hickory and pecan is my favorite.

    I have a home made and an electric. Love em both. The electric spoils you they are so easy. Don't have to hover over it to keep temp. Keep on smokin.

    Damn Boys, yall hittin me where I live . the Princes got me an " Oklahoma Joes ". last year for my birthday , haven't got it hot yet , damn thing is so pretty. got the copper top grill pads to keep the grease from makin it nasty , smoke , gas , side burner , FN thing is bullitproof
