    I make my version of those poppers. Actually 3 versions. Made 100 of them and some homade salsa for a friends birthday party. They went faster than the rest of the food. Even my baby back ribs! Everyone loves the mix of bacon, peppers, and cheese.

    Any chance you would share the recipe and instructions on how to build them?? I'm famous for my deviled eggs, made almost 300 for a friends wedding, like you said, they disappear fast.

    I use LARGE jalapeno peppers cut in half. Clean the seeds, or if you want really hot leave some in! In a few individual bowls, mix some creme cheese with several kinds of cheese and spices. Heat it slightly to soften. (I grate my own cheese,sharp cheddar, mozzie, parmesan, pepper jack etc) Vary the mixes. Smoked and reg. paprika, garlic, onion powder, salt & pepper etc. Or even w/o spices is good. Whatever you like. Fill the shells with the mix and sprinkle more cheese on the top. Some with homade bread crumbs, (store bought crumbs are ok too) some without. I do crumbled bacon on top of that, OR mix the crumbles into the creme cheese mix OR put a strip on top., or even wrap them and secure with a tooth pic. Or leave the bacon out for the vegan chicks. As you can tell I like to vary any recipe I do. Variety is the spice of life! Thing is, you can't really do it wrong....They all taste good.

    Please educate an old, dumbass Buckeye, what is boudin?? My butcher will take a pork loin, roll it out, lay some bread stuffing in it and roll it back up, now you want me to wrap it with bacon, sounds yummy.

    I went to a cajun fais do do. They has so many cajun dishes I couldn't remember them all...What a blast! This was in Slidell La. Ayeee! Them cajun boys had Streams, Allisons and fast mercs......Met them coonasses in Merc school. They were so cool had to make the trip and visit for a week.
