I'm wondering if just adding joists between the tunnels, and tying those into the floor would work.
There is no wood core in this boat, and sleeks are known for being heavy layups, but I would think that some force on the keel would be transmitted via the stringer into the floor. As far as I know the floor was bonded to the tops of the tunnels, so any pressure upwards would hit a wall of plywood about 2' wide that is glued down with resin onto the tunnels, and glassed over on to the sides of the tunnels.

Yes. The thing had a few sets of joists bracing the stringer against the sides of the tunnels, all the way up to the bottom of the floor.
