Actually they did that in 2018. But someone did over 98 in a hydro a few years back :

Yeah, I wondered about that back in 2018 when Jag claimed a new electric record.
Mike Bontoft set the UIM electric kilo record at 98.80mph and the APBA electric kilo record at 98.2mph, both in 2008. So Jag comes along ten years later, goes ten mph slower and somehow is able to claim the world electric boat speed record???
Maybe they got an eleven mph credit for the cool video...Cheers,
