Rock , the kitchen knives are from woodcraft or Amazon. Zhen is the company that sells the knife blanks I used. The other is Katsura. Both companies knives are 100% done....minus what you want to use for the blanks....rivets, pins etc. Woodcraft sells the nicest mosaic pins that i have found. In either case, just type "knife blank" wherever you go to. As for the sharpness.....shave the hair on your arm.
Amazon also had other sellers on there as well.

ZHEN - Chef's AUS 10 3-Layer Knife Blank 8-1/4" L x 5/64" T (210mmx 1.8mm) (woodcraft.com)
This knife is the Zhen version of the ones I built. It will shave the hair on your arm and is cheap for what you get. The first one I built was the upgraded 67 layer Damascus version. It was a gift for my wife.......the HRC rating is 61+(hardness). I didnt have to sharpen it for over a year or more. You wont be disappointed. I actually highly recommend taping up the edge with painters tape 3-4 times so you dont get cut. I leaned on it one time and it just sank into my hand GOOD TIMES

I made my own 2x72 using a 1700rpm 8" grinder w/ 5/8 drive motor. Buying everything new would cost about $300
It would be possible to use the more common 3600 rpm 6" grinder but it is imperative to use a small drive wheel to keep belt speed low.Azure AZ259, 8.1

As far as thes knife blanks go, I've yet to handle a blank or knife kit that used good steel. I recognize that it's very difficult to make a kitchen knife from scratch but a camping or every day carry blade is not difficult at all. Its much more gratifying to make something nice from a pile of raw materials.

Sure appreciate all the good info. You went and got me all wound up about making a knife which is something I have always wanted to do. It is nice to have info and advice from experience so I don't have to gain it the hard way. Kind of miss woodworking anyway cuz the last 27 years were dedicated to commercial stuff built from fiberglass and aluminum after years of custom wood cabinetry. Thanks again.

Being a woodworker , then you will understand what I am saying......it was relaxing to do what felt like old times....fitting the wood, backcutting, and all the details.....like fitting trim on a piece of furniture
For me, the bandsaw is priceless as well, because I am usually cutting the scales from a 1-1/2 x 1-1/2 x 18 or 2 x 2 x 24 blank.Last edited by keefallan; 11-27-2020 at 01:50 PM.

Bandsaw is one of the handiest tools you can own. Three years ago we moved into a house and was going to sell the shop. Sold both of my small bandsaws leaving me with one real small saw and two large saws. Eventually sold all but 1 big saw and now I wish I had my little 12" saw back cuz I sold the house and moved back into my barn. I'll get me one once the right deal pops up.

Got more knives completed today
I finished up my other knives today. One is for my brother(the chefs knife) and the other is for my wife(the vegetable knife).
These are them. The top knife has bloodwood and the lower one has olive wood on it. That is the wood I have been using for her knives as I build the set for her. It is a 67 layer damascus blade and it shaves hair right outta the box.
This is them with the sanding almost completed. Note the tape..........for my protection.......the corner of the blade still stuck me.
They are wet here.........waiting for the finish to dry.
This is the completed knives. You can make a set of knives that will surpass just about anything you buy and have a look completely custom to you.
These are more knives of sorts. Since becoming a woodworker many years ago, I got into planes and then restoring them. I love hand planes......specifically old Stanley Baileys. I came into hard times about 4 years ago and I had to sell off my plane collection. That was a tough time. But its have given me the opportunity to re-obtain a new set. These are the latest to my new collection. I still need/want about 4 more to finish it again. But these are type 11 stanleys .........a number 3 and a number 6....Both have their "victory" blades. For those who dont know, these are from 1910 -1917......fully functional and ready to shave wood. Both blades can shave your hair.........
These are not mine. But I did restore them. They are my boss' planes. All of them are meant to be used and some of them are as old as the 1880's. The cabinet is made out of figured maple and mahogany.

All beautiful work guys. Very impressive! Damn sure should be proud of it. Bud of mine uses old ground down files for blades and fits deer horns for handles. He's in Montana and does it to fight cabin fever.
