300x safety alarm problem under full throttle

Hey guys I’m looking for some input on what may be goin on with my stv euro with a 2003 merc 300x on it, any insight would be much appreciated. So I can take the boat in the high 90’s (5800 rpm) no problem if I accelerate slowly but if I mash the throttle from let’s say 30ish and try to make a full pull it almost always sounds the alarm and reduces power on me, even though I have water pressure (15ish lbs ) , full of fuel and oil, and it seems even touchier if I have a passenger with me, not sure what could be going on, I’m running a 10 inch setback jackplate Which is all the way down , It’s around 1 - 1.5 inches above pad and it has a drag4 30p prop on it. You may be tripping the water pressure warning . I am not certain but habe heard a few talk about 280 s with the consumer box on them . Others will chime in that have more experience with the 300x and if similar . What setback plate are you using ? Usually stock mounting holes are used and a hydro ---' plate out of Texas is installed and they sit about 3/4 above at lowest setting . So what plate and how is it installed / factory holes ? . A DDT may be needed to see what alarm your experiencing . Im not that experienced - just throwing it out there.
