Lab Finishing vs. Blueprinting
The terms seemed to be interchangeable at times so does someone have a good definition or know the actual differences or is it generally left up to the company performing the service to define?

Blueprinting is done with a digital scanner and the prop is brought into correct specs for the design. Labbing is a "hand" tuned prop that has already undergone a blueprint check out. Labbing tech are VERY experienced at tweaking a prop for a certain boat/engine combo to get that last few mph.

A nicely done lab prop is amazing. I have a lab’d Hoss Triton that is a piece of art. It’s perfectly symmetrical, sharp as a knife, and mirror quality polish. I have a Merc lab cleaver that’s nice, but not nearly as nice as the Hoss.

Many shops do this. Brett owns BBlades and used to work for mercury racing in the prop division and he does this, and Mark's Propellers does this and he told me most props he checks have different pitch on the different blades. He said if the prop is out bad, he can often pick up 3 - 4 mph and if the prop is not out as bad closer to 2 - 3 mph.
