    Pork Loin. Butterflied out. The Green paste is Fresh Rosemary, sage, Fennel seeds, Orange Zest, Lemon Juice, garlic, salt, Pepper corns All ground together and Olive oil added to make a paste. Once spread all over Add ham and slivered onions. Roll tight and Tie with Butchers twine. In the Smoker or Oven at 375 for about 1.5 hrs or until internal temperature reaches 160/165. Let rest for 5 minutes then slice into 1 1/2" slices. serve as is or with a Brown Gravy and vegetables of Choice.
