If its light, you can go up to a 30 and 32 for what Euroski said. I like running four blade Dewalds the best out of all the propellers that I have tried on STVs. I also like Pro-ETs.

I have a Euro with a 225 Pro Max and for just running around not worrying about making a number the Mercury Pro Max is a great all round propeller. Carries weight well, cruises good and the boat still accelerates very well. I am running it a inch and 3/8's above the pad its a non labbed 29 pitch. Havent run the Pro ET or any other 4 blades. I have a Mazco 29 3 blade, that I cant figure the set up out with it and a 30 Lightning ET that is the fastest propeller on the boat. But the boat likes to run light with that wheel.
Depends a lot on your style of boating, are you running by yourself or carrying friends, coolers ect. Are you looking to run the fastest you can every time out? Your style of boating will dictate what type of prop you run most of the time.

I had a Mercury Lightning ET 30 on a Euroski with a Mercury 280 and the boat loved it.

I have a 2010 Euro with a 225 Sport XS 3.0L / 1.63 Sportmaster and have tried quite a few props and IMO its hard to beat Mercury props. I have a 32x14.5 cleaver, 30x15 cleaver (slight lab by BBlades), 30x14.5 4 blade hump back cleaver and a 32x14.5 ET (slight lab by BBlades). I tried a Drag4 and Mazco and sold them both. Its hard to compare what works best on a Euro when comparing a 2.4 or 2.5L to a 3.0 because of the additional stern weight.
My biggest mistake looking back when I had the boat built was believing the Euro is a set and forget in terms of engine height. I have a 5.5" Bobs set back plate and am kicking my self in the azz for not having Jack install a hydraulic jack instead. I just play on the weekends so the extra few pounds wouldn't be a issue.
To date the 32x14.5 has reached 98 MPH on GPS at about 6k rpms and it was still going up. The 30x15 is new and I havent dialed that in yet, only been out for 1 ride. I am expecting to see 100 MPH maybe +. I see 85 MPH with 4 on board using the humpback.
The thing to keep in mind with a Euro IMO is a slight shift in weight from side to side or front to rear or fuel level (28 gallon tank) changes the entire dynamics.
I have a trim gauge and that gives you a starting point, to learn and maximize the "beast" requires ALOT of time behind the wheel. I have had mine 10 years and only have about 93 hours on it and I learn something on every trip out.
In the end as noted above, it depends on what you plan to use the boat for.
