Do the orifices in the tube dictate the shot or jet size going into them?

Yes, the holes in the tubes are like the nitrous and fuel jets dictating the hp gain and are calibrated to each other by the different sizes of the orifaces between the fuel and nitrous to keep your fuel mixture from leaning out or going too fat.
