Set back is determined by speed and hull. Well proper setback is. It can also be used for bow lift. I would say 6-8 if under 60 10+ if over is a good rule of thumb. Hull prop ect will affect that.

I had a 1992 Baja 186 with a 2.0L 150 Mercury with a few small engine modifications. I installed a Land & Sea Jack which I believe was about 6" of set back and then after sea trials added a set of Bobs 2" blocks as I still had to trim to get the bow up. This gave me a total of about 8" and made a huge improvement. I gained a few hundred RPMS and gained about 4-5 MPH as I was able to go from a 23" laser II to a modified Rich Booger 25" Tempest.

You might want to run a search for this boat specifically. Some hulls do not like much set back, others like a bunch. Better to find someone who has done it already and copy them. Unless you have a ton of time and money, then by all means, trial and error work too.

And it was mentioned above but I am gonna say it again, make sure your transom is good. If it has not been replaced, likely it will have issues. The further you move the motor away from the boat, the more stress you put on the transom. And do not try and brace it with metal and such.
