Adding jack plate on a 21 cat hull

I'm running a 300 e-tec gen1 with 12" setback on an Advantage Banshee / Eliminator Scorpion hull. Just changed the gear case to a sport master 1.62 gears. When approaching 80 the boat starts to 'roll' and wants to touch each corner due to the drive height I believe; the nose cone is 1" below the pad. I want to move it closer to the general-purpose recommendation of 1 1/2 inch above the pad, but do not have a jack plate. In this case I was running a 26" Bravo 1 prop, and now have a 28" Signature cleaver to try.

Quick note before my questions; transom was rebuilt with a set of large and a set of small knees. Seems very solid.

Here is my question; what do I do with the 12" fixed setback. Thinking that some of my viable options are:
    1. Can I add a 2.5" jack plate to the fixed setback. Would then have 14.5" of setback. In this case I'm worried about having that much torque on the transom.
    2. Do I get rid of the setback and go with a larger jack plate? possibly in the range of 10"
    3. Get a 6" fixed setback and add a 4-6" jack plate?

Thanks in advance for the conversation on this topic. Picture is of the old gear case... do not have a picture of the new one at the moment.

You could probably find a used Rapid Jack in 12" pretty reasonable. I believe HStream1 maybe auctioning one off. PM Him

Thanks for the quick reply on this, and I'll look for it. It seems easier just to add 2.5" jackplate without having to fill transom holes and re-drill for a new jack plate. However, I've then gone to a longer setback with the pressure on the transom. Not sure it could handle that extra pressure. Any experience with > 12" setback and anything to worry about there?
