Sure!! I would need some more information of what you are trying to do and I will design and build to suit your needs.
This is what I do, Vnemous, design and fabricate custom components.
Although, my recommendation for a performance boat would be a foot throttle to free up your hands.

Yeah its for a class 7 race boat the the passenger is doing the throttle and shift so it need to be in the middle of the seats.

I have a concept. Are you trying to keep this a light as possible?
What engine are you running?
What is the distance of the cable pull for the throttle from idle to WOT?
Do the class rules require a neutral safety switch?
Which side of the boat does the throttle man sit in?
This could get interesting!!!
