Cause the flat water is a 10 minute drive, and the ocean is over an hour.

You'll never have water pressure that you are looking for at anything but WOT.... 12-15 psi is good. I have standard 5.5 CMC jack plates. Running 30 pitch cleavers even just at 6K you should be in the high 80's....... trim it out until it flies.... go striaght, don't turn it.... take the tunnel tab off.... you are still doing something wrong and or have total junk props.....

The props were bought from a reliable member on here who has offered to take them back for a full refund if I get them inspected and determine they are "bad". What would a bad prop look like, or is it something not usually visible to the naked eye and has to be determined by a professional?

The props where bought from me. My offer will "always" stand if for some reason they check out "BAD" and only something a prop professional would be best to confirm their true condition!
I'm confident they are not bad but may or may not need a cleanup.
From the sound of your last run you are very close running 80 with a full load in the boat, 4 person, coolers and full fuel, cats are very weight sensitive. If they were totally bad they will never get that close. I personally think you are getting the feel on running it by letting it loosen up with light positive trim.
Try to borrow another set or bring those to Rich if he is close to confirm for you. Keep in mind you can buy 2 "new" sets of props, mount them and they will both run differently, just the way it is.
Maybe Rich can tweak or pitch them up for you to 31's if that is what you really need.
BTW, I would suggest not to tweak them or change them now if you are still planning on repowering.

I believe we hit 81mph with tanks about 3/4 full, 4 people, and two coolers. I was able to get it to settle down on our first attempt at it by using a little bit of tab and trim up. Second time was the same thing. Third time we had a little chop and I didn't touch the tab and it settled down on it's own. But at 80mph it's barely hangin off the rev limiter cause I have to pull the one throttle back slightly and it's barely out of the hop zone. But it got there.

John my only concern with 34's is not being able to plane out with a full load of fuel, people, and coolers. I'm not sure those 200's have the nuts to push thru the bottom end with 34's and all that weight. Btw the 30 skater you're selling is bad azz.

Yeah, I had a T18 for over 10 years, and have driven a few 24 Skaters, but jumping from one to the other is a bit of a leap. If you need the weight for testing or to feel comfortable until you get more seat time (no shame in that) get some bags of sand, or grass seed, or fertilizer or whatever you will need around the house and carry them. It there is an accident, they don't get hurt or sue, and while riding around they don't drink your beer!
Not busting your chops by any means (I envy your move to the 24) but I have never been hurt in a boat that I didn't think I could drive!

It was merely a question. But thank you for your helpful advice.
