84 Valero V set up "Help me" Merc 2.5

I have a 84 Valero V Bottom with a MERC 2.5 200 carb. and Bob's Machine low water pickup, motor is all stock. The bottom has been sanded, its has dual opposing cable steering and 9 1/2" set back on the manual jack plate. I really need some help in adjusting the set up and prop selection. Maybe some Ideas on How fast I can go with this package. Anytips on driving or other info you guys have on how I can get the most speed with what I have would be greatly apprciaciated.
