Center them in the channel, but stick half your lower cover on so you can get and idea of where to go up/down the curve in the exhaust adapter. You will see there is a bolt boss cast into the lower covers that takes some manipulating to get the probes in without having to cut it out. You still may have to trim on it some, depends on what they gave you to mount the probes.

Logic dictates that I install them up into the exhaust adapter plate facing upward so that the probes are centered in the exhaust dump holes?......... being careful to make sure the belly pan does not hit the exterior of the thermocoupling after installation? I heard other guys installing in the PH but I see too much water jacket for that to be logical......am I on the right track here? Thanks again Ben

Them look like some big probes. Don't think you could put them in the power head if you wanted to. Normally, when installed in the power head, you center drill the head bolt over the exhaust port for each cylinder and go in from there. That probe looks bigger than the head bolt. The probes I use are only 3/16" diameter and mount with 1/8" NPT compression fitting. They have a radiused 90 degree bend comming out of the fitting so with a little preplanning they will fit under there nicely.
I would just work on getting them centered in the chest and at what ever angel it takes to get them to fit under the lower cover. You should only need to get about 1/2" of the brobe into the exhaust stream. The tip is where the thermister is.
