the "non-woven" is what is commonly called MAT, correct? That's what I have always heard it referred to anyways.

Yes...back when we used to build boats that's what we called it and the woven material was called woven roving and we used 24 oz if memory serves me correctly. We used a very fine woven material called cloth...6 or 8 oz I believe.

Whats the most common layup for a performance boat? Gel, some material or light cloth to prevent print through I assume, and then alternating layers of cloth or mat?

Hull. Gell, 1.5 oz mat, 2 lays 1708 biaxial glass. 1/2'' foam or balsa core covered by 1lay of 1708. This is light and very strong. 1708 is a woven glass using a 3/4 oz layer of mat on one side and 17 oz. (45 deg. /45 deg.) on the other. Add core board stringers over the glassed core and use 2 lays of biaxial to cover and attach. 3/4'' core board and biaxial for transom built up for the intended use of the boat. Lighter for calm and just racing, Heavier for rougher waters and more demanding conditions. Deck. Gell. 1.5 oz mat, 1 layer 1708, 1/2'' foam core covered by 1 layer 1708. This is very light and you add glass where it is needed.
