I have two new to me 150 EFIs (the later throttle body motors), a 2002 and a 2005. Is there a way to disable the oil injection, and use premix (assume it would require tricking the sensors), and is it worth going through the effort to do so?

Leave it on. The ecu controled oil injection is very reliable. It also has a good warning system and the engine gaurdian protection.

Thanks, that is what reading the manual was kinda pushing me towards (based on Guardian), but am glad to hear that the ECU controlled oil injection is robust.
