Going to re rig my 30 spectra this winter needs new jack plates, it has CMC hydraulic 10" set back on it now
05 300x
Any input on brand and set back would be great.

Porta brackets if you want the best. They custom build each one for you.

Lots of boats run Bobs. I have one on my 21 Skater and it works flawlessly.

Shawn Torrente's are the latest and best non-hydraulic ones out there. All the X-Cat boat are using them as well as a bunch of guys running 400's. He will custom make them for you with any setback, color or logo you want.

You don't need a lot with twin 3L motors. I had 6" with 260s and the boat was easy to balance out. I would go with the Porta Brackets so you can dial in your efficiency at your finger tips.

why not just re-build the ones you have with nice new seals and bearings etc ? save a ton of money

The ones that are on the boat are a 10" set back most of the ones I have looked at have a much shorter bracket on them, the boat seems very flighty compared to another one I was in. Thought I would just ask the questions before I start on the project.

Porta's are awesome, however in your case it might be too much setback and you may not need the mobility. I know a lot of setups with newer cats with big twins going this direction, the "set it and forget" setup.
