If your asking battery cable size, the larger the gauge the better.

I like to use fine strand welding cable. A bit more $$ but worth it..imo

More flexible, easier to work with. The longer the run, the larger the gauge.

Not familiar with your Triton 21, so how long I don't know. Maybe this chart will help.

My guess is a 1/0 or 2/0 would do. Used this 2/0 my last street rod at about 15' long + and - cables. I moved the battery to the back of the car, and the motor was just 12.5:1 compression. No starting issues. Just for comparison.

I had some cables mad from http://www.bestboatwire.com/ for my viper when I moved the battery to the bow from the transom. Not a bad price and seem to be well made if you are looking for a place to make them. You can also just make them yourself, I would guess any boat dealer can either make them or sell you the cables and fittings, some just use a vice to clamp the fittings on, but finding the crimper would be best.

A batter in the bow vrs a battery close to motor does not need same gauge wire hence my question.

Size and type of engine is also a consideration when it comes to wire size.

Both of the previous posts are good to think about. I use 2 awg wire since it was about 11 foot of cable, I could have used 4 awg but price was not that different. Some newer motors require 2 awg.

All good and important suggestions above! Distance does matter due to voltage drop.
I personally like 2awg tinned on all my boats. Do not think you can go wrong that way!
This is my setup on a 21' boat.
