I just noticed that my 86 enchanter has the motor offset to the port side 1" and these holes are original there is no signs that any holes have been filled and redrilled
So my question is why and could this be the cause of the boat not going straight at idle/slow speed

No, many boats wander/drift mostly due to prop rotation... even I/O's. That's why U got a steering wheel(LOL)!

Yeah I know what a steering wheel is for but that doesn't answer why it's offset oh and the boat steers very light to port and heavy to starboard

Problem fixed motor is not offset after all let's just say if was a malfunction with the measuring stick doh

Cool your is good. But wouldn't be the 1st one I have seen with a crooked and off center motor install...

all deep vees wander at low speed, its a nature hull design. i would fill holes with hardwood pegs using slow set epoxy. sandwich the holes with 1/8th al plates both top and bottom. this way you can center the holes as they should be. this will not correct the low speed wander. steering back and forth is the only correction, just done over correct.
