I am going to be mounting a CMC 6" jackplate and thus playing with motor heights.
currenlty mounter right to my transom on a 16' v hull with a 95' xri 150 i am running 58-60 mph. I know the speed does by no means require a low water pick up. My questions are, at what general height should I be thinking I need a low water pick up, and should I run a water pressure gauge regardless?

Absolutely, positively get a water pressure gauge because that will be your indicator of how high you can run. Keep raising it until the pressure starts to drop then drop back down to where you make full pressure.

What psi should my xri run at, it is a low volume high pressure system correct? Want to make sure I order the right gauge.
Any thoughts on the faria Chesapeake gauges?

no lower than 15 psi so somewhere between that and 25 JMO

Jack plate is mounted, water pressure gauge just got here along with a couple other new gauges.
hoping for a spare afternoon and some nice weather this weekend to play in the boat

if you install a jack you also need a psi guage and low water pick up. it can take only one over heat to blow a motor. it takes around $500 to protect a $5000 plus motor.

So finally got the boat wet today.
only seeing 5psi at idle and 15 to 20 at speeds.
temp sending is not working, need a new one...

did you put the water pressure pipe direct to block, or just T it in ?
if its a T fitting then pull the pipe from the block and go direct, then you can read the correct pressure.
T- fitting at best will never show what it realy is.

Thats normal wp for that motor.

So, water pressure sensor works great.
now, temp gauge, will a water temp gauge work with a head temp sender?
specifically, a faria Chesapeake water temp gauge with my head temp sender on the 2.5l
