The steam wheel lets you dial in more or less fuel and never leave the drivers seat. Like if you have to idle a long time or run slow speeds lean then go rich for top end both. Check the Brucato site it is explained pretty well but kinda hard to find.

Only problem with steam wheels is after idleing a long distance in the lean position, its easy to forget to richen it back up. They need a lite or horn that comes on above 2000rpm when running lean.JMO

EGT Probe and gauge with the steam wheel is a must have if you like your motor happy
