What options do I have for mounting twin I6 mercs on the back of a 16' speedboat?
Is there such a thing as a dual-mount hydraulic jackplate?

Sure. This one will take up to five!

I can't imagine how much it would cost though. And it probably has too much set back for you.

Interesting, but yeah, I think too much setback. Would it be 'better' to use a 'lift and trim' jack plate instead of the original power trim on the motors?

I have a dual hyd. jackplate on my challenger and I have an extra plate that I would sell, but it would be too much weight for your boat with twins, you'll be lucky to keep a 16' afloat with nothing but the motors back there!

Is that my old plate?
It's gotta weigh 80lbs, the entire unit probably came in around 130 with the hydraulics etc.

"you'll be lucky to keep a 16' afloat with nothing but the motors"
I was also wondering how the weight would affect 'drivability'. The person before me stuck a large aluminum fuel tank up under the bow, perhaps that would offset weight of the extra motor a bit for balance?
Mounting directly on the transom I would assume I would have to lift the motors up a couple inches...

Is there a way to synchronize the power trim on the mercs?
