Have 89 pro comp with manual jack plate 6" has stock 260 with 20" 1.87 CLE 2 hole..

What's a good prop to start with?

What kinda speeds can be expected?

30 ET or cleaver 110mph maybe more when you get the hang of it.

Ski bottom? What does it weigh? What's your propshaft height?

Running propshaft pretty much level with bottom right now.. It has 20'' mid on 6'' jack plate.. I have only run once so far

Even with the bottom 6" back is a bit low. Start at least 3/4" above the bottom and move up from there. At 6" back, that's like being on the transom down 3/4" from where it is now. Too low.

I have a pro comp and it loves the yamaha drag wheels, a rule of thumb on the jack plate an old man told me and it has always been true with me is for every 2'' of offset from the transom move the motor 1/4 up so with a 6'' jack plate you should be 3/4'' above the bottom of the boat.....I have tried cleavers to much transom lift, the ET's give me to much bow lift if you have balls they are good props but they scare me to much as they love to lift the bow, so I chose to stay with the yamaha props, there are a few guys that can work a yamaha for a stv and make it really run right, brett in mobile is good with stv props , randy gilbert from laffeyette la is good with them, JC propellors is good with them they have all worked my props and i dont see any difference between any of them far as speeds go, there all with 1 mph of on another...I am running a 26 yamaha with my set up as i dont put up big numbers for what i do with the boat it is the over all best running prop i have.........hope that will help u some.........
