I have disconnected the vro's on my twin V-8's, considering electric fuel pumps but have no experience with them. Suggestions and opinions are greatly appreciated.

Usually the red pump, either with an inline regulator, or setting the built-in regulator to 4.5~5.5PSI. I've heard lots of good about the Carter street pumps, and it's likely they'd be more reliable. One Holley Blue would probably feed both motors, but I don't know if I'd want to take the chance.

If you run the Holleys, or any rotary vein type pump for that matter, don't forget to put a filter in the line AHEAD of the fuel pump. Even the smallest grain of trash will lock the pump up and put you to paddlin'. I've never had a failure on a properly filtered Holly pump. One more recomendation: these pumps blow a lot better than they suck. Keep this in mind when you decide where to position the pumps in the boat. Low and close to the tank always works better.
