I dont think you will have any problem with a 225. Its all in the proping anyway. I use a 21 Trophy plus for waterskiing. I have never really needed anything more that a 4 blade. I know alot of guys run the high 5, but I have alway gotten plenty of bottom end bite with 4 blade.
My rude was a 2.7L, this new Merc is a 2.5L, and I know the more cubes the better for bottom end. So if you get a 3.0L or bigger the better.
The Merc has a 200HP (5 pedal) front half, mild porting, exast work and .050 off the heads. We had to have the stock 225 Pro Max ECU richend up, and figure it puts out about 265 HP at the power head.
It does come out of the hole as hard or harder than any tournamant ski boat.....inboard or outboard:)
