Just once, I'd grab one of these: http://www.shop3m.com/60980045581.html?WT.mc_ev=clickthrough&WT.mc_id=shop3m-AtoZ-Marine-Fast-Cure-5200-Adhesive-Sealant

I am going to disagree. 5200 is nearly permanent. It more of an adhesive than a sealant. I have seen gel coat damage trying to remove something "sealed" with 5200. especially something with a lot of surface area like a jackplate. 3M 4200 is a better product for this.
They make both 5200 and 4200 in both a regular formula and fast cure. The regular really does take a week to cure. The fast cure is just as good and cures overnight.
A little tip when working with polysulfate adhesives/sealants. Cleanup can be a bitch! Get yourself a squirt bottle of charcoal grill lighter fluid and some rags you can throw away. The charcoal grill lighter fluid works great for cleaning up and is a handy container.

Acetone works but evaporates off too fast. Kerosene works too which is pretty much what the grill fluid is but in a nice comtainer.

Have a few rags andy too... The 4200 is the way to go, a heat lamp and de-bonding agent will get it apart later.

Boatlife's "Life Seal" is good to. Combo of silicone and polyurathane.

For clean up try WD-40. it works great with 5200 and most other things that get sticky.

oversize the holes, epoxy them, then use your 4200. spray bottle of water will quicken the cure of the 4200 if you don't use fast cure.

When mounting my jackplate, I got a the top bolts started and then I got some blue masking tape and masked off the transom and the jackplate sides. Applied 5200 in a bead between plate and transom and into bolt holes, I know the 4200 is easier on removal, but I don't plan on taking mine off. I then tightened all bolts and used nitrile gloves to force the sealant into the seams around the jackplate. I then pulled off the masking tape to reveal a nice uniform bead of sealant around the plate. The gloves really help in keeping the stuff off your hands.

Good point. My buddy had 5200 on his and he pulled all the mounting bolts out of the JP and it did come off even the weight of the motor. Like I said, if you are just going to do it once. ;)
