I used both on my 21 Shadow with is very similar to your boat. I ran a slightly modified 200 merc with a 6" setback with the gearcase approx 2" below the bottom.
The small ear choppers tend break or crack. I used a 24 big ear worked by ron hill for an every day prop that ran 60-65. I ran a stock big ear 26 and would run 68-70 on a cold rough day, but it was a dog on the bottom end.

Big ear-- recessed hub in rear
Small ear-protruding hub in rear
Big ear more lift and less slip
Small ear more slip and less lift for big boats. They do crack but they are very fast even with the added slip. Less blade area means more topend. Fastest chopper style we have run on the 2003XB Allison so far have been small ear choppers, not the big ears. Have not tried Hoss yet and I am sure the cleaver is faster .
If the blades are less than 5" wide, it's a small ear.

Jim I have a 21 Apache. I just added a CMC jackplate 6'' setback and a HOSS 26 pitch chooper prop. Boat runs 66 GPS in choppy water. I have not got a chance to test on smooth water. I have big ear prop. The propshaft is 4 in below pad.
