I just broke a piece that I am not sure what it is, i was replacing the water lines and there is a piece that is plastic that the nipple broke. It is attached to the throttle linkage and seems to look like some kinda of valve for the water, first can I by pass this, if not what is it called so I can go buy a new one.

Not having a crystal ball handy, perhaps you could tell us what make model and year the motor is so we have a clue what you are talking about. A picture may be benefitial as well.

Do a search of racer's posts about thermostats and you will find a more indepth answer. That valve controlls the flow of water at idle to keep pressure on the back of the thermostats to restrict water flow at idle. Restricted water flow means it keeps warm at idle, then as throttle increases, the pressure on the back of the t-stat decreases, allowing more water to flow out of the head. Clear as mud? You can fix the valve, get rid of it (which decreases idle temp...not actually the best thing for the motor), or get rid of it and run 70 hp thermostat covers with a spring that will basically do the same thing without all the valve crap. You ready for a KX yet?

I had a pretty good idea of what it did but I wanted to make sure.
I guess I will be buying one of those tomorow. I have been waiting for you to call me with a price on the Green Machine.
