I have nearly completed a Wellcraft Nova 230 XL rebuild, took the old sterndrive out and set it up for a Evinrude V8 outboard mounted on a pod. To balance the boat I put water into containers to the same weight as the engine and all other gear which would be loaded onto the transom and inside the rear of the boat. We then slung the boat on a single sling to find the COG. This is the correct way to balance a boat. We moved the weight in and out till we got it to the correct spot. The result was 20 inches of setback, total. You have two engines and considerably more weight than I have on mine. I would suggest that you should be bolted directly to the transom or with minimum setback jack plates. I agree with Revolution141, 31 inches is way too much. When you sell the pod you can put the money toward the jack plates.
