So tonight I replumbed the motor as it would be stock and now have a 3/8" tell tale. It starts pushing water at 145* both on the gauge and with IR reading when idling. Once I up the rpm the pressure gauge starts to flutter and I get a stronger stream from the tell tale as the poppit is opening. Temp still drops off to about 90* by IR, gauge stops at 100*. I think the pressure is better but am afraid ill still have no temp but maybe with the poppit dumping more water it'll build temp? Does the poppit dump water that has not been in the block and is just up from the pump?

So have had a chance to run the boat some..... Idle has not changed.... 5-7psi at idle or just off idle... temp runs about 145*. Once on plane the temp drops to below 100* and I'd guess it was 90-95*. Pressure is still over 30 psi at 90+ mph.... So now what?

Hard to say, Pete. Probably 32-35psi. Yeah it's a Sporty.

Another thing you may want to consider is rigging a head temp sensor, just to see what you've got there, I still suspect you're closer to being ok than you think.
If that thing demonstrates a head temp of 130 or so this time of year, you may be just driving yourself nuts for little reason.Living in the Freedom provided by Bud Conner and his fellow warriors.

I don't think it will but not sure. I did compare with an IR and it's within 5* of my water temp.

I hit it all over the place and there is some change here & there but for the most part the head is running what the temp gauge says....

Generally, head temp should be quite a bit higher than water temp, at least 20°

I really wonder if I don't have some sort of parts issue? Poppit needs rebuilt, wrong gaskets, wrong plate..... just not adding up....

That's a thought..... I guess I could put a small bleed line in there. I guess I really need to go out and run the crap out of it, stop really quick and then IR it. I was using IR in driveway with no load.
