The main difference technically is strength and less exhaust restriction . They look better as well , but were created for strength under extreme usage ..." Offshore " .

The offshore mid usually has the single trim ram system which is beefier and stays in place better when you jump a wave or let off the throttle suddenly.

Stronger,look cool, Heavier, louder,and louder. I cracked my 20 Bass mid. So ya stronger might be better. You can make them quieter if ya have to with a plate block off. Not sure what that restiction would do to performance though?

In addition to the above stated reasons, one of the biggest reasons for their design was to re-route the exhaust to exit above the bullet. It not only is less restrictive, but the gearcase runs cooler in endurance applications. I don't think a lot of people even think about this, but grab your gearcase after a hard, prop surfacing run. Now imagine a two hour offshore race at 7000. It's not a huge issue with lake runners.

Then there is the advantage of the prop running in cleaner water without exhaust blowing past it too. I'll bet any performance increase probably is derived from less slippage than anything.
