Gonna depend on the year...the newer trucks are rated a bit higher then the older ones.
I just sold a newer style '07 and towed up to 6,000 pounds with it with no problems. Acceleration, handling and braking were all acceptable. Towed the same loads with a '99 with the same opinion, though the 07 did tow better.

my '07 was rated to 7500, I would think with a weight distributing hitch and electric trailer brakes you would be able to pull that with out any issues, but I think on the highway you would have to be willing to limit your speed, use of OD, and expect about 10 mpg.
At 6,000 pounds I was comfortable towing about 80-85 mph, handling was fine.

Ive got a 04 ext cab z71 with 5.3 of course, with the optional 4.10 gears, I pull my 27ft 6500lb 5th wheel camper along with my 1800lb boat behind that without any issue, have over 100,000 miles on it now. Trailer brakes are a must but it definitely has the power and handling. Just be safe no mater what you pull.

I have a 99' 1/2 ton GMC Suburban SLT and it's rated for towing at 7300lbs but the towing package is rated 10k lbs (for safety). It's got the 5.7 vortec and pulls with no problem up to 5-6k lbs. At 7k lbs or more it doesn't like it too much but like others here mentioned it's more important on being able to stop.

I pull with 05 z71 crew cab my center console weighs about 4k with gas and gear and trailer about another K, 6'' square tube galvanized 25ft long. The t-top and e- box aren't exactly areodynamic, but I still manage 14-17mpg highway driving speed limit or 5mph under. I'm running stock gears 3.42 and stock size tires but they are e rated . They will beat your teeth out when not towing but pulling a load they are worth the compromise they don't squat and they don't sway.

Unless your towing in the mountains should be OK. Tranny's are the killer in the mountains. 10 bolt diffs don't hold up well , check the sticker on the door for the GVWR. If it's over 6800lbs should be OK.
