EGT temps question - 99 2.5 200

I raised the jetting in my WMV carbs 2 sizes after reading this post--> http://www.screamandfly.com/showthre...204#post722204 . When I take off my EGTs hit approximately 975-1025°. If I run up into the 4-5,000 rpm range the temps will climb to approximately 1050-1075°. What I'd like to know is what temps am I looking to achieve when taking off and while running down the water. What is too much and what is too little? I think it's too fat on the low end for sure, it sounds different and doesn't jump out of the water like it used to.
