I have a plug in my adapter plate, that I can use for a transom pickup, can anyone tell the size and thread size please.

I would assume it's a pipe thread NPT or National Pipe Taper. Take it out and measure the threaded part and I can tell you. Or take it to hardware store and match it up.
It should be tapered slightly but visable and the inside diameter(of the female side) should be about the size that they call it. 1/2"ID=1/2"plug but would measure about 3/4" on the plug.
If it's not a tapered thread it still might be a pipe thread, National Pipe Straight. NPS. A regular nut won't fit it if it's NPS.

It's a flair fitting i don't remember what size it is but I went to a supply house and bought a stainless fitting to cap mine off. If you have trouble finding one let me know I can take mine off and match it up and send you one. I think it was $30. or so. Let me know Greg
